Lemon-Garlic-Thyme Chicken

Lemon-Garlic-Thyme Chicken with Pearl Onions and Potatoes Mix 3 Tb oil with 2 Tb lemon juice, and whisk together. Season some bone-in chicken parts (I used 2 leg quarters) with salt, pepper, 1 minced clove of garlic, and about 1 tsp dried thyme (or 1 Tb fresh minced), and pour the oil/lemon juice mixture over them. Refrigerate for a few hours or overnight. Preheat the oven to 375F. Cut 3 medium potatoes into large dice and place in an ovenproof dish. peel 12 pearl onions (sometimes you can find these, already peeled, in bags in the vegetable section of the freezer case at the grocery store. They are a pain in the ass to peel!) and place in the dish with the potatoes. sprinkle the vegetables with salt and pepper and 1/2 tsp dried thyme (or 1/2 Tb fresh minced). Pour in a Tb of oil and a Tb of lemon juice and toss to coat. Place the chicken on top of the vegetables, and bake for about an hour.

Hi there. The pictures of your food look very yummy. Are these recipes you have tried before and you are only posting them because they are very good or are you trying them for the first time? I just wondered if maybe you could post a review on what you thought of these dishes maybe in the comments section or at the end of the recipe? Are you using one cook book or lots of different cook books? Also, not sure if you are interested but there is a friendly community for sharing recipes and finding new ones at www.copykat.com I am just a member and there are message boards for lots of different recipes and it's family friendly and just a lovely group of people. Thank you so much for sharing your recipes and tempting me with those pictures. :)

Well, some recipes are recipes I'm trying for the first time, others are tried-and true. Basically, I post pictures and recipes of every different thing I cook. If I don't post, it's because I made something for dinner that I already posted a picture and recipe for. I use the cookbooks listed on the sidebar, but I change things a lot. Sometimes I just make stuff up- the baked chicken recipes and roasted potatoes and stuff are seat-of-my-pants cooking. I comment some within the recipes, but rest assured, I would not post recipes for things that tasted like ass :) I should write more non-recipe stuff, though. Thanks for visiting!
