Chicken Nuggets
Cut about a pound or so of boneless chicken breasts into small (1.5" or so) chunks. Combine:
1/3 cup mayonnaise
1 Tb lemon juice
1 tsp garlic powder
salt and pepper
and coat the pieces of chicken with it. Dredge the coated chicken pieces in breadcrumbs or matzah meal, and brown lightly in oil in a skillet over medium heat. Bake for about 15 minutes at 350F until fully cooked.
